So last night I cooked up a pre-Mothers Day dinner, a delicious prawn stir fry!
I find cooking to be a really relaxing process, most of the time! I love trying new and different ingredients, as well as the can’t-go-wrong classics too.
Here are the ingredients you’ll need for 2-3 servings:
- Egg noodles
- x1 garlic clove (thinly sliced)
- 1/2 lemon
- Shaoxing rice wine
- x2 175g packets of Fresh King Prawns (unpeeled)
- x1 red onion
- x1 pak choi
- Handful of baby sweetcorn, and a handful of mangetout as well
- Handful of mushrooms
- Ginger, Soy Sauce, and chilli flakes
First up, heat up a large wok with oil and add the garlic and mangetout for a minute.
Add the vegetables and mix well, before adding in 1 tbsp of Shaoxing.
Toss in the fresh prawns, add in a little ginger and sprinkle of chilli flakes, and mix well.
After a couple of minutes, add 1 + 1/2 tbsps of Soy Sauce, and another 1/2 tbsp of Shaoxing if you like.
Once you’ve drained the noodles and are ready to serve, squeeze the lemon into the wok and mix well. And then serve!
What I loved most about this dish was the lemon really coming through to give it a juicy, fresh taste!
